Grilled Radicchio with Fresh Peas

Wondering what I did with those peas from earlier this week?  Well...now you can taste it!

Roaming through the farmers market at PSU this weekend and came across four incredible ingredients that inspired this beautiful delicious recipe.  Radicchio is one of my favorite vegetables; the bitter flavor is something I crave.  If you've ever tasted a farm fresh one, you know that they are bitter with a sweet finish.  The peas, red onion and baby heirloom tomatoes paired with the radicchio and was finished off with a lemon-dill dressing.

All of these ingredients are in season now.  Check out your local farmers market if you can!

Grilled Radicchio with Fresh Peas

INGREDIENTS

  • 1 Large, or 2 Small Radicchio
  • 4 Stalks Red or Green Onion
  • 1/2 LBS Sugar Snap Peas
  • 1 Small Heirloom Tomato
  • Mayo
  • Lemon
  • Dill
  • EVOO or Coconut Oil
  • Salt & Pepper

INSTRUCTIONS

PREP AHEAD: This makes two servings and is delicious warm or cold.  Prep ahead for two easy delicious lunches during the week.

Shell pods. Slice radicchio in half or quarters. Slice onion in half lengthwise. Dice tomato into bite size pieces.

In a grill pan, heat oil over medium heat. Place radicchio slice side down and grill for 3 minutes. Turn and grill for another 2 minutes. Transfer to plates or lunch containers.

Return pan to the grill. Toss in onion and peas, saute for 3-4 minutes. Plate with riddicio. Add fresh tomato to the plate.

In a small bowl, mix mayo, lemon juice, dill, salt and pepper. Drizzle over the salad. Serve and Enjoy!
