Paleo desserts are a particular obsession of mine. The idea that I can create this edible delight that has a "sweetness" to it that I now qualify as dessert, but also has the nutrients so that I don't hesitate to give it to my daughter for breakfast is the ultimate awesomeness in my house. The other benefit of these little guys is that they are totally portable and can be eaten on demand (no reheating). That right there makes our week so much easier.
A Note on Bee Pollen: Bee pollen contains almost all the nutrients the human body needs to thrive. Supper cool, right? Bee pollen is about 40% protein and is considered one of natures most well-rounded nutrient dense foods. Finding locally sourced bee pollen can help boost your immune system, protect against allergies and has also shown to support weight loss, healthier skin, act as an antioxidant, promotes healing and so much more. To give you some more info, I've included links at the bottom of this post. Try it! Seriously.
