Sweet Spicy Meatballs, Marmalade Glazed Carrots, Berry Salad & Whole Fat Cheese Cubes

This is a simple, but oh-so-important blog post.  Lunches for our kids are vital, should be simple and yet we consistently have WTH moments every week when trying to do something other than a sandwich and an apple.

So here is one of Stella's lunches broken down "Prep Ahead" style with a Menu, Grocery List, Prep Day Guide and Day Of Guide.

MENU

Mixed Berries (1)

Havarti Dill Cheese Cubes (2)

Marmalade Glazed Carrots (3)

Mini Sweet & Spicy Meatballs (4)

GROCERY LIST (Makes 5 Days of Lunch)

  • 1 LBS Fresh Strawberries (or other berries)
  • 1/2 LBS Fresh Raspberries (or other berries)
  • 1 PKG Havarti Dill Cheese
  • 1 LBS Bag Baby Carrots
  • 3 TBS Marmalade
  • 2 tsp Apple Cider Vinegar
  • 2/3 lbs. Ground Beef
  • 1/2 lbs. Ground Meat (Lamb, Pork or Turkey)
  • 1/4 Cup Honey
  • 1 Small Sweet Onion, Diced
  • 2 Tablespoons Parsley, Finely Chopped
  • 1 Tablespoon Kosher Salt
  • 1/2 Tablespoon Pepper
  • 1/8 Teaspoon Cayenne Pepper (optional)

TOOLS

  • 3 Medium Containers with Lids
  • 1 Small Container with Lid
  • 1 Lunch Bots Quad, or Other Containers for Lunch Box

PREP DAY 

PRE PREP

Pre heat oven to 400.  

Take out two baking sheets, cover each with foil.

CHOP

Dice 1 sweet onion.  Finely chop 2 TBS parsley. (4)

Wash and dry fruit.  Slice strawberries in quarters.  Combine all berries together in a medium container.  Seal and refrigerate. (1)

Cube entire cheese block into 1/2" cubes.  Store in small container.  Seal and refrigerate. (2)

SAUTE

In a small sauce pan, heat 2 TBS of oil over medium heat.  Sauté diced onions until translucent.  Turn off heat, then add honey, parsley, salt, pepper and cayenne. mix well.(4)

In a small sauté pan, heat marmalade and apple cider vinegar over low heat, just enough to make it more liquid. (3)

COMBINE

In a medium bowl, combine ground meat with sautéed onions.  (4)

In a medium bowl, combine carrots and marmalade mix. (3)

BAKE

ake 1" round meatballs.  Place on a sheet pan. Place on middle rack. (4)

Spread carrots over second sheet pan. Place on lower rack. (3)

Bake together for 25-30 minutes. (3,4)

STORE

Store separately in medium containers with lids.  Refrigerate. (3,4)

DAY OF 

Portion out each of the four items into your child's Lunchbox Quad or other lunch container.
