The crock pot is a powerful tool for anyone who wants to prep meals ahead. There are thousands of incredible recipes to be found on the internet,many of which are clean healthy meals. Teriyaki sauce is a very NOT clean sauce generally and is also a sauce that we LOVE.
And so my mission was defined...
Include this dish as part of your Prep. Put it on in the morning, go play, then come back and complete your prep (including the pork shoulder sauce) in the afternoon.
Teriyaki Pineapple Pork Shoulder (Crock Pot Dish) | Serves 6-8
- 3 LBS Pork Shoulder
- 2 Cups Cubed Pineapple
- 1 Sweet Onion
- 1 Cup Homemade Teriyaki Sauce (or store bought if you must)
TERIYAKI SAUCE INGREDIENTS
- ½ Cup Coconut Aminos
- ¼ Cup Honey
- Zest of 1 Orange
- Juice of 1 Orange
- 2 TBS Rice Vinegar
- 1” Ginger, Grated
- 2 Garlic Cloves, Grated
- 1 TBS Sesame Oil
- 1/8 tsp Red Pepper Flakes
- 2 tsp Tapioca Flour
Dice Onion and place in the bottom of the crock pot.
Add 1 cup of pineapple
Place pork shoulder on top, season with salt and pepper then, cover with 2nd cup of pineapple.
In a medium saucepan, heat all teriyaki sauce ingredients, except tapioca, do not boil. Warm just enough to whisk ingredients together.
Turn heat off. In a small bowl, add tapioca plus 2 tablespoons of the sauce.
Mix well until lumps disappear.
While whisking teriyaki sauce, slowly pour tapioca mix in and combine well.
Pour sauce over pork shoulder, secure crock pot lid and cook on high for 6 hours.
Remove pork from crock pot. Use a fork to shred meat, remove any excess fat.
Using a hand blender, blend sauce smooth. Transfer to sauté pan and simmer for 10 minutes.
Pour 1 cup of sauce over meat to keep it moist. Serve excess sauce on the side.
Serve with mini tortillas and salsa of your choice.
